Ingredients

  • 8 cups lettuce
  • 1 cucumber (large, peeled, seeded and chopped)
  • 1 pint tomato
  • 1/2 cup Wish-Bone Italian Dressing
  • 1 salmon

Directions

  1. In large bowl, combine all ingredients except salmon.
  2. On 4 serving plates, arrange salad, then flake in salmon. Drizzle, if desired, with additional Wish-Bone® Olive Oil Vinaigrette Dressing and sprinkle with freshly ground black pepper.

Simple & quick for a weeknight meal for us workaholics. Five ingredients or less is always a plus as it leaves room to experiment. I had left over roasted corn that I shaved off the cob and added to the salad. Chopped a couple of olives and a few banana pepper rings for a bit of WOW! Seasoned the salmon with a bit of salt & red pepper...yeah! total time still 10mins.
