Description

Tartare is a dish featuring raw meat or fish that is seasoned and typically shaped into a small cake. This recipe for salmon tartare follow the classic preparation and plating method. Inspired by Asian cuisine, this salmon tartare is flavored with dijon mustard, pepper, fresh coriander, and sweet soy sauce. Plate the salmon tartare on a bed of lettuce and serve with a drizzle of soy sauce. Additional option to add Tabasco sauce for more heat.

Ingredients

  • 300 grams fresh salmon (really, from the tail and skinless)
  • 30 grams onions
  • 1 tablespoon dijon mustard
  • 1 egg yolks
  • ground black pepper (Freshly)
  • 1 bunch coriander
  • oil
  • sweet soy sauce (Kecap Manis)
  • salt

Directions

  1. Cut the salmon with a knife into small bite-sized chunks. Set aside in a large dish.
  2. Finely chop the onion and coriander. Add to the salmon.
  3. Add the mustard, egg yolk, black pepper, salt, and a drizzle of oil (about 1 tbsp.) to the salmon and mix thoroughly.
  4. Add a little tabasco for a spicy taste (optional).
  5. Divide into 2 portions, cover with plastic film and leave in the refrigerator until ready to serve.
  6. Turn out onto a large plate, drizzle with soy sauce and serve with lettuce leaves.
