Ingredients

  • 1 tablespoon butter
  • 6 scallions
  • 1 celery stalk
  • 1 clove garlic
  • 1 bunch basil
  • 2 cups chicken stock
  • 1/2 cup white wine
  • 2 salmon fillets
  • 6 shrimp (mediums, peeled and deveined)
  • 1/2 teaspoon tandoori powder (or other spicy seasoning)
  • 1 lime
  • salt
  • pepper
  • parsley (for garnish)

Directions

  1. Place shrimp in small glass bowl and toss with tandoori powder and juice of lime.
  2. Melt butter in medium sauce pan and briefly cook chopped scallions, celery, and garlic.
  3. Place salmon fillets face down in pan and brown for 3 minutes.
  4. Turn salmon to finish cooking, another 3 minutes or until done.
  5. Remove salmon from pan and cover to keep warm.
  6. Add chicken stock and simmer for 3 minutes.
  7. Let cool, then pour solids and a little of the stock into a blender, add basil, and puree.
  8. Return to sauce pan and add white wine.
  9. Simmer for a few minutes.
  10. Add salt and pepper.
  11. Cover shrimp and microwave for one minute or until done.
  12. Place one piece of fish in each serving bowl, and pour broth around the fish.
  13. Place shrimp down the center of each piece of fish.
  14. Grind black pepper over the top, and garnish with parsley.
