I did this with chicken, wow! Already cooked in my pressure cooker, soft chicken that I couldn't figure out what to do with! Delish. I added cauliflower rice too. Powdered mustard was excellent.

My only recipe tweaks were: I left out the capers (just because I didn't have any) and I added a bit of Old Bay. I also used fresh salmon that I had baked with no additional seasoning. I served these on top of salad with a Lyonnaise dressing. Even my littlest food snob loved it!

Best salmon coquettes I have ever made. Used fresh salmon and steamed it and then followed recipe. My husband, who is not a salmon fan, said we could have this any time. Use the Barefoot Contessa tarter sauce for an amazing tarter!
