  • 8 slices English cucumber
  • 8 whole wheat crackers
  • 4 ounces herbed cheese (spreadable, like Boursan or Alouette, at room temperature)
  • 4 ounces smoked salmon (sliced)
  • onion rings (small thinly sliced red)
  • 3 sprigs fresh dill
  • 2 sprigs fresh flat leaf parsley
  • 1 green onion (thinly sliced on the bias)

    Directions

    1. Arrange cucumber slices and crackers in a circle on a serving platter. Spoon herbed cheese into a piping bag fitted with a star tip. Pipe a decorative swirl of cheese in center of cucumber slices and crackers. Arrange salmon slices in a rose shape over cheese. Garnish with red onion, herbs and green onion.
