- 4 ounces instant mashed potatoes
- 15 ounces red salmon (drained, boned and skin removed)
- 2 green onions (thinly sliced)
- salad (to serve)
- mayonnaise (to serve)
- lemon wedges (to serve)
Directions
- Prepare mashed potatoes in a large bowl according to package directions.
- Flake in salmon and add onion. Season to taste and mix well. Shape evenly into 8 patties. Arrange on a tray and refrigerate, covered, for 30 mins.
- Heat a little oil in a large skillet on medium heat. Cook patties for 4-5 mins each side, until golden. Drain on paper towels. Serve with salad, mayonnaise and lemon wedges.

That's how I make my salmon patties. I use red sockeye salmon. saltines and black pepper, and egg. I dont drain, but I do remove the the bone. After I form the patties I roll them in more cracker crumbs before I fry them. They are the best.
