Salami and Potato Casserole

  • 1 1/4 cups heavy cream
  • 2 eggs
  • 1 1/2 pounds potato (cooked, slices)
  • 3 1/2 ounces salami (thin, slices, cut into strips)
  • 1/2 red onion (small, finely sliced)
  • 2 ounces baby spinach
  • 1 1/2 ounces grated cheese
  • 1 sprig rosemary leaves (fresh, removed)

Directions

  1. Preheat oven to 350°F. Lightly grease 4 shallow ramekins.
  2. Whisk together cream and eggs. Season. Distribute 1/2 the potato slices between ramekins. Top with salami, onion and spinach. Pour 1/2 the cream mixture evenly between ramekins and top with remaining potato slices. Finish with remaining cream mixture then sprinkle with cheese and rosemary. Bake for 15-20 mins, until golden and bubbly.
