Description

Grilled meat needs a light side dish to complement it. This Salad with Pork Chops gives you the perfect combination of a grilled meat entree with a light, refreshing salad side. Chopped turnips, zucchini, and cucumber are at the heart of the salad. Seasoned with chopped garlic and chives, the vegetable salad pairs beautifully with the grilled mustard seasoned pork chops. This recipe includes instructions for a chive and mustard sauce to drizzle over the meat and salad for added flavor.

Ingredients

  • 4 servings
  • 1 zucchini (unpeeled)
  • 1 turnips
  • 1 cucumber
  • 1 garlic cloves
  • 1/4 bunch chives
  • olive oil
  • 3 pork chops
  • mustard seeds (ground, to taste)
  • salt
  • 4 tablespoons extra-virgin olive oil
  • salt
  • 1/2 tablespoon mustard (L'Ancienne)

Directions

  1. Cut the ends of the zucchini, and grate.
  2. Peel the turnips and grate.
  3. Peel the cucumber, remove the seeds, and cut into small pieces.
  4. Mix the zucchini, turnips, and cucumber. Distribute in four plates.
  5. Sprinkle each plate with chopped garlic, chopped chives, and a drizzle of olive oil.
  6. Grill the pork chops with a little salt, and the ground mustard. Once cooked, cut in small pieces, and place on top of the salad in each plate.
  7. For the sauce, in a small serving dish, add some olive oil with some chives, and mustard, and stir well.
