  • 4 tablespoons fruit vinegar
  • 2 teaspoons dijon mustard
  • 1 tablespoon honey
  • 3 tablespoons sunflower oil
  • 1/4 bunch chives (finely chopped)
  • 1 red onion (small, peeled and diced)
  • 3 1/2 ounces bacon (sliced)
  • 1 leek (trimmed, washed and sliced)
  • 1 pound dumplings (frozen mini)
  • 5 1/2 ounces butter lettuce (washed, torn into small pieces)

Directions

  1. Whisk together vinegar, mustard and honey and season to taste. Add 2 tbsp oil in a trickle, while stirring. Whisk chives and onion into the dressing. Sauté bacon in a dry pan for 5 mins, then drain on paper towels. Sauté leeks for 5 mins in the bacon fat.
  2. Cook dumplings according to package instructions. Heat 1 tbsp oil in a pan and fry dumplings for 5 mins. Season to taste. To serve, arrange dumplings, lettuce, bacon and leeks on 4 plates and drizzle with the dressing.
