Sage scented montasio cheese mini-muffins are great snacks for any time of the day. These mini-muffins are very easy to make and have only 620 calories. This recipe only requires 10 ingredients and a cook time of 45min.These mini-muffins can be fun to bake with your kids or grandkids if you have any. Ingredients

  • 200 grams flour
  • 80 grams butter (melted)
  • 50 grams extra-virgin olive oil
  • 50 grams milk
  • 2 eggs (lightly beaten)
  • 1 teaspoon baking powder
  • 10 grams salt
  • sage
  • 50 grams parmesan cheese (grated)
  • 80 grams cheese (montasio, coarsely chopped, can be substituted with asiago cheese)

Directions

  1. Preheat the oven to 180C.
  2. Combine the flour, butter, oil, milk, eggs, baking powder, salt, two pinches of sage, the parmesan cheese, and the montasio cheese together until the batter is of a firm and uniform consistency.
  3. Place the batter in the mini muffin liners or in the muffin maker molds.
  4. Bake for approximately 20 minutes. They should be lightly golden. If using a muffin maker, cook the muffins for 10 to 13 minutes.
  5. Remove the muffins from the oven and sprinkle them with a mixture of parmesan cheese and sage.

I appreciated the savory flavor in these muffins. We like to keep muffins like these around for snacks in place of other processed or bad foods like chips. The calorie count is high, but they are filling enough even to have as a light lunch.
