Ingredients

  • 8 egg yolks
  • 3/4 cup granulated sugar
  • 1/2 cup sparkling wine (or sweet white wine)
  • mixed berries
  • biscotti (to serve)

Directions

  1. Whisk together egg yolks, sugar and wine until combined. Place over a double boiler and whisk constantly until thickened and doubled in size, around 8-10 mins.
  2. Distribute berries between serving glasses. Pour sabayon over top. Serve with biscotti.
