Made with a mixture of rye and spelt flour, these Rye and Yogurt Bread Rolls are the perfect accompaniment for your dinner tonight. Made with plain yogurt and honey, these rolls have a lovely moist texture and a slightly sweet flavor. Allow the dough to rise until it doubles in size before shaping and allow the dough to rise again after shaping before you bake the rolls. Spray the oven with water before you put the buns in to bake to create a little steam. This will ensure that the rolls have a lovely crust.

The bread was yummy! I used a squirt bottle to squirt the inside walls of the oven to create the steam needed for the perfect crust on this bread. I have also used an old brownie pan with a few holes drilled through the bottom. I place the pan under the baking pan holding the bread, and pour a cup of water into the old brownie pan. Some of the water would evaporate to create steam and some of the water drips down into the oven evaporating there. Some folks have ruined their ovens attempting to create steam inside them for the perfect bread crust, so use caution.
