Ingredients

  • 10 grams fresh yeast
  • 25 ounces warm water
  • 400 grams white flour
  • 100 grams rye flour
  • 20 grams powdered milk
  • 25 grams sugar
  • 75 grams butter (melted)
  • 75 grams sourdough starter (liquid)
  • 150 grams walnuts

Directions

  1. In a bowl, dissolve yeast in 10 centiliters of warm water, and let stand for 20 minutes.
  2. Pour the flours, powdered milk, sugar, melted butter, and salt Into the food processor bowl,

  4. Mix for 10 minutes.
  5. Cover for 30 minutes.

These are a favorite item when we have large family dinners. I always pulverize my walnuts when I make these so the flavor is more evenly dispersed throughout the buns.
