Ingredients

10 grams fresh yeast
25 ounces warm water
400 grams white flour
100 grams rye flour
20 grams powdered milk
25 grams sugar
75 grams butter (melted)
75 grams sourdough starter (liquid)
150 grams walnuts

Directions

1In a bowl, dissolve yeast in 10 centiliters of warm water, and let stand for 20 minutes.
2Pour the flours, powdered milk, sugar, melted butter, and salt Into the food processor bowl,
3Add the sourdough starter and yeast mixture.
4Mix for 10 minutes.
5Cover for 30 minutes.
6Place the dough on a work surface, add the nuts, and knead to mix them in the dough.
7Put the dough in a bowl and let it rise for 40 minutes.
8Divide the dough into 10 equal pieces.

10Place them in small boxes or on a silicone cloth.
11Slit with a blade.
12Cover with a damp cloth and let rise for one hour.
13Preheat oven to 240 degrees Celsius.
14Bake for 15 minutes.
