Rye Buns with Walnuts


If you have the time to spend on making the perfect rye buns to make your lunches for the week, then this recipe is guaranteed to be a palate pleaser. It combines the hearty aromatic flavors of rye with the salty and wholesome flavor of walnuts. The combination is a rich and hearty bun that is perfect for your weekday sandwiches. Or serve them warm with butter for a great start to dinner.


  • 10 grams fresh yeast
  • 25 ounces warm water
  • 400 grams white flour
  • 100 grams rye flour
  • 20 grams powdered milk
  • 25 grams sugar
  • 75 grams butter (melted)
  • 75 grams sourdough starter (liquid)
  • 150 grams walnuts


  1. In a bowl, dissolve yeast in 10 centiliters of warm water, and let stand for 20 minutes.
  2. Pour the flours, powdered milk, sugar, melted butter, and salt Into the food processor bowl,
  3. Add the sourdough starter and yeast mixture.
  4. Mix for 10 minutes.
  5. Cover for 30 minutes.
  6. Place the dough on a work surface, add the nuts, and knead to mix them in the dough.
  7. Put the dough in a bowl and let it rise for 40 minutes.
  8. Divide the dough into 10 equal pieces.
  9. Make them even.
  10. Place them in small boxes or on a silicone cloth.
  11. Slit with a blade.
  12. Cover with a damp cloth and let rise for one hour.
  13. Preheat oven to 240 degrees Celsius.
  14. Bake for 15 minutes.
