This Russian dish is filled with savory flavors that have a fragrant smell. Ground meat is mixed with garlic, black pepper and seasoned salt, to make a tender meatball. After being pureed and cooked for 5 minutes the sauce compliments the meatball and asparagus very well.

Ingredients

  • 1 slice bread (torn)
  • 1 dash milk
  • 500 grams ground meat
  • 2 garlic cloves (peeled and minced)
  • 1 egg
  • 100 grams parmesan cheese (grated)
  • ground black pepper
  • salt
  • 1 tablespoon vegetable oil
  • 1 onion (peeled and chopped)
  • 1 leek (chopped)
  • 1 wild asparagus (bundle, trimmed and chopped)
  • 500 milliliters vegetable broth

Directions

  1. Soak the pieces of bread in the milk.
  2. In a bowl, mix the ground meat, garlic, egg, cheese, and the bread. Season with salt and black pepper.
  3. Mix thoroughly using a fork and form into meatballs.
  4. Fry in a tablespoon of oil. Brown on all sides, remove the meatballs and drain on paper towel. Set aside.
  5. In the same skillet, saute the onion, leek,, and asparagus, for 10 minutes..
  6. Add the vegetable broth and simmer for 15 minutes.
  7. Use an immersion blender and puree into a sauce until smooth.
  8. Place the sauce in a saucepan and add the meatballs. Cook for about 5 minutes to bring out the flavors and serve.

This recipe really brought me back to my Russian heritage; you cannot get any closer to the ones my grandmother made than this recipe does. The meatballs were exploding with flavor and the wild asparagus sauce was to die for. I will be putting this recipe in my favorite recipe pile and give it a huge 5 stars.
