Generally anything associated with the word rotten should be avoided, but this cake is the exception. This no butter cake features honey, cinnamon, fennel, and brown sugar. It is a rich cake with an additional crunch from the chopped walnuts. One slice is enough.

Ingredients

  • 3.5 deciliters olive oil
  • 2 deciliters water
  • 1.5 deciliters honey
  • 2 teaspoons cinnamon
  • 1 teaspoon fennel
  • 750 grams flour
  • 200 grams brown sugar
  • 100 grams walnuts (coarsely chopped)
  • powdered sugar

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. In a saucepan, add the olive oil, water, honey, cinnamon, and fennel. Heat to boiling.
  3. Meanwhile, in a large bowl, add the flour, sugar, and walnuts. Mix evenly.
  4. When the first mixture is boiling, add it to the bowl of flour.
  5. Mix everything well with a spoon, until it becomes a very uniform dough. It is a very heavy dough, like a bread dough.
  6. Place in a cake pan without greasing, and bake for about 30 minutes.
  7. Remove from oven, let cool, and sprinkle with sugar.

Was a little skeptical of this recipe when I came across it due to the name. But I am happy that I read through the ingredients and gave it a try. It’s definitely not what you think. Super delicious. You've got your sweet, your nutty (I love walnuts), a little salty. Really good dessert. I'll have to do this again sometime.
