Description

When you're in search of an easy weeknight supper that can be made with ingredients you already have on hand, consider turning to this pasta dish. Featuring corkscrew pasta that's blanketed in a quick, pesto-kissed tomato sauce that simmers atop the stove for 15 minutes, the pasta is garnished with Parmesan cheese right before serving. Cook the pasta until it's al dente, and finish it in the sauce for optimal flavor.

Ingredients

  • 1 teaspoon onion flakes
  • 50 milliliters extra-virgin olive oil
  • 500 milliliters tomato purée
  • salt
  • ground black pepper
  • 4 teaspoons pesto
  • 400 grams rotini pasta
  • parmesan cheese

Directions

  1. 1Soak the onion for 2 minutes in water.
  2. 2Drain, and saute in a saucepan on medium heat for a few minutes in the oil.
  3. 3Add the tomato puree and a pinch of salt and black pepper.
  4. 4Cook the sauce on a low heat for about 15 minutes.
  5. 5Remove from heat and add the pesto.
  6. 6Cook the pasta in salted water until it is al dente, about 8 minutes. Drain and add to the sauce. Cook for about 5 minutes.
  7. 7Sprinkle with Parmesan cheese and serve.
