Ingredients

  • 1 teaspoon onion flakes
  • 50 milliliters extra virgin olive oil
  • 500 milliliters tomato puree
  • salt
  • ground black pepper
  • 4 teaspoons pesto
  • 400 grams rotini pasta
  • parmesan cheese

Directions

  1. Soak the onion for 2 minutes in water.
  2. Drain, and saute in a saucepan on medium heat for a few minutes in the oil.
  3. Add the tomato puree and a pinch of salt and black pepper.
  4. Cook the sauce on a low heat for about 15 minutes.
  5. Remove from heat and add the pesto.
  6. Cook the pasta in salted water until it is al dente, about 8 minutes. Drain and add to the sauce. Cook for about 5 minutes.
  7. Sprinkle with Parmesan cheese and serve.

The pasta for this dish was nicely cooked and very tender. The tomato sauce and pesto really gave it the much needed zing I desired. This 4 star recipe will grace our dinner table again tomorrow night.
