Bring a little German tradition to your breakfast table with this recipe for Rote Grutze with Waffles. A sweet fruity German dish, this recipe for rote grutze is made with cranberries, raspberries, and red currants. Cooked in red wine and lime and sweetened with agave syrup the rote grutze is bursting with red fruit flavor. Make the waffles according to the instructions in the recipe and serve with the rote grutze for a German inspired meal.

Ingredients

  • raspberries
  • red currant
  • cranberries
  • 500 grams fruits
  • water (1 lt.)
  • 4 tablespoons cornstarch
  • red wine
  • 100 grams agave syrup
  • 150 milliliters water
  • 300 grams flour
  • 180 grams butter (melted)
  • 4 large eggs
  • 100 grams agave syrup
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • ground cinnamon
  • superfine sugar

Directions

  1. Remove the stems of the fruit. Set aside 150 grams to add at the end.
  2. Place the other 350 grams in a saucepan and add the water. Bring to a boil and cook for 30 minutes stirring constantly.
  3. After 25 minutes, add the red wine.
  4. Once the 30 minutes have passed, remove from the stove and strain. Place back on the stove.
  5. Dissolve the cornstarch in as little water as possible. Add the cornstarch and lime juice to the fruit while boiling. Stir vigorously to prevent lumps.
  6. Add the agave syrup and taste. Add more if needed.
  7. Add the rest of the fruit and remove from the stove. Chill in the refrigerator.
  8. Bring the water to a boil and mix with the flour.
  9. Add the butter and eggs. Mix.
  10. Add the agave syrup, baking soda, vanilla extract, baking powder, and cinnamon.
  11. Turn the waffle iron on.
  12. Spread some butter on the hot waffle iron. Pour the batter in and cook the waffles.
  13. Sprinkle with superfine sugar and serve the warm waffles with Rote Grutze on the side.

The berries are sour and sweet and are delicious when topped on the warm waffles. My waffles came out fluffy and flavorful. The batter would work in a pan as pancakes if you do not have a waffle iron. The superfine sugar can be replaced with powdered sugar.
