Description

Bring a little German tradition to your breakfast table with this recipe for Rote Grutze with Waffles. A sweet fruity German dish, this recipe for rote grutze is made with cranberries, raspberries, and red currants. Cooked in red wine and lime and sweetened with agave syrup the rote grutze is bursting with red fruit flavor. Make the waffles according to the instructions in the recipe and serve with the rote grutze for a German inspired meal.

Ingredients

raspberries
red currants
cranberries
500 grams fruit
water (1 lt.)
4 tablespoons corn starch
red wine
100 grams agave nectar
150 milliliters water
300 grams flour
180 grams butter (melted)
4 large eggs
100 grams agave nectar
1 teaspoon baking soda
2 teaspoons vanilla extract
2 teaspoons baking powder
ground cinnamon
superfine sugar

Directions

1Remove the stems of the fruit. Set aside 150 grams to add at the end.
2Place the other 350 grams in a saucepan and add the water. Bring to a boil and cook for 30 minutes stirring constantly.
3After 25 minutes, add the red wine.
4Once the 30 minutes have passed, remove from the stove and strain. Place back on the stove.
5Dissolve the cornstarch in as little water as possible. Add the cornstarch and lime juice to the fruit while boiling. Stir vigorously to prevent lumps.
6Add the agave syrup and taste. Add more if needed.
7Add the rest of the fruit and remove from the stove. Chill in the refrigerator.
8Bring the water to a boil and mix with the flour.
9Add the butter and eggs. Mix.
10Add the agave syrup, baking soda, vanilla extract, baking powder, and cinnamon.
11Turn the waffle iron on.
12Spread some butter on the hot waffle iron. Pour the batter in and cook the waffles.
13Sprinkle with superfine sugar and serve the warm waffles with Rote Grutze on the side.
