This Tuscan pork dish is traditionally seasoned with salt, pepper and herbs and grilled over a charcoal or wood fire. It's usually dipped in vinaigrette before and after cooking to add flavor and help form a crusty char. In this simplified version, spareribs and sausages are placed in the slow cooker with dry white wine and ground spices of your choosing. After six hours spent cooking slow and low, they're ready to eat.

Ingredients

  • 1 kilogram pork spareribs
  • 8 sausages
  • extra-virgin olive oil
  • spices (A mixture of ground)
  • 3 ounces dry white wine
  • black ground pepper
  • salt

Directions

  1. Grease the slow cooker with extra virgin olive oil.
  2. Add the meat, wine, and ground spices, carefully stir to season well.
  3. Place the lid on the slow cooker and set it to high for 6 hours.
  4. Serve hot.

The meat turns out very tender when cooked in the wine. When I make it again I am going to try adding red wine instead of the white though, because I think it will compliment the flavor better. It is an overall delicious meal to serve.
