  • 1 sweet onion
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 2 teaspoons fresh rosemary (chopped, or 1/2 tsp dried rosemary leaves, crushed)
  • 1/8 teaspoon ground black pepper
  • 4 baking potatoes

    Directions

    1. Preheat oven to 450°.
    2. Combine all ingredients except potatoes in large bowl. Add potatoes; toss to coat.
    3. Turn into 13 x 9-inch roasting pan. Roast, stirring occasionally, until potatoes are tender and golden, about 50 minutes.
