Risotto is a universal favorite and always a good option when entertaining. To achieve the proper consistency, with the rice grains suspended in a creamy liquid, cook over low heat and stir frequently--and remember that the dish will continue to cook off the heat, so don't overdo it. Here, the risotto is enriched with Roquefort cheese, which melts and helps to bind the rice, and a flavorful ham such as Iberico or prosciutto.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion (peeled and diced)
  • 1/2 red bell pepper (seeded and diced)
  • 1/2 green bell pepper (seeded and diced)
  • 1 liter chicken broth
  • 160 grams rice
  • 100 grams roquefort cheese
  • 6 slices ham (Iberian, or prosciutto)

Directions

  1. Add the oil to a skillet on medium heat. Add the onions and bell peppers and saute for 5 minutes.
  2. In a separate pot, bring the broth to a boil. Reduce to a simmer to keep warm
  3. Add the rice to the onion and peppers and saute for 2 minutes.
  4. Slowly add the broth to the rice, constantly stirring to loosen the starch for a creamy texture.
  5. Add the Roquefort cheese and melt.
  6. Before plating, add the slices of Iberian ham or prosciutto and serve.
