Romanesco, Granny Smith, Lentil and Zucchini soup

Today I will used a romanesco broccoli in the soup. It is the cauliflower's pretty 'sister', with a milder flavor. To complement I added Granny Smith (to give bit of zing), zucchini, lentils and ginger. The use of ginger in many recipes is not an obsession, but rather an attempt to benefit from its anti-inflammatory properties.

Ingredients

  • 1 romanesco (medium cauliflower, cut into florets)
  • 1 granny smith apple (peeled and diced)
  • 1 zucchini (large, cut into pieces)
  • 1 onion (peeled and cut into quarters)
  • 2 cloves garlic (peeled)
  • 6 mint leaves
  • 20 grams fresh ginger (peeled and cut in pieces)
  • 1 dash salt
  • 150 grams lentils
