Ingredients

  • 1/3 cup promise buttery spread
  • 2 tablespoons loosely packed fresh basil leaves
  • 6 cups vegetables (assorted sliced, onion, red or green bell peppers, mushrooms, zucchini, yellow squash or eggplant)
  • 8 ounces farfalle (penne or ziti pasta, cooked and drained)
  • salt

Directions

  1. Preheat oven to 450°.
  2. Blend 1/4 cup Promise® Buttery Spread with herbs in small bowl; reserve. Toss vegetables with remaining Spread. Arrange vegetables in broiler pan without the rack. Roast, stirring once, 20 minutes or until vegetables are tender.
  3. Toss vegetables with hot pasta and reserved spread mixture. Season with salt and pepper. Sprinkle, if desired, with grated Parmesan cheese.
