Ingredients

  • 1 1/2 pounds cod
  • 1/3 cup i can't believe it's not butter! made with olive oil spread
  • 2 cups white mushrooms (quartered)
  • 1 cup cherry tomatoes
  • 1 shallots
  • 2 cloves garlic
  • 1 teaspoon fresh thyme leaves

Directions

  1. Preheat oven to 425°.
  2. Arrange cod in shallow roasting pan. Season, if desired, with salt and ground black pepper. Pour half of I Can't Believe It's Not Butter!® made with Olive Oil Spread over cod and turn to coat. Combine remaining ingredients and arrange in pan.
  3. Roast 20 minutes or until cod flakes with a fork. To serve, arrange cod and roasted vegetables on platter.

It was ok. Next time I will try a bit of salt/pepper. Of course wouldn't you know it, I forgot to add the shallots. That's what it was missing! I'll update next time.

I loved this recipe and it will be a regular dish for me! I used ghee instead of their substitute and I used a mix of different types of tomatoes. Mmmmm, Mmmmm good!

This recipe was delicious. I think next time I will give everyone their own wedge of lemon or lime to squeeze on the fish. We will absolutely be having this again. It was tasty and super easy to make.
