    Delicious!! I used squash, carrot, and beet noodles. Tasted delicious and the kitchen smelled great! They will cook down though - so make sure you use a large portion of veggie noodles if you are feeding a large group! :)

    Yummy!! I used sweet onion, Japanese yam, carrot, broccoli stalk, and zucchini. I’ll make this again for sure.

    Absolutely delicious! Usually my family complains when I share vegetarian foods with them, but this time they loved this dish, so much that my wife bought the ingredients to prepare it once again very soon! As stated also from Brandi in her review below, the veggies really cook down... the quantities in the recipe are barely enough for 4 people.

    I thought this was really great, but I would mention that the veggies really cook down, so depending on how much you need to feed everyone, make more than you think you'll need. I also played with the seasoning a bit: I added cumin and adobo as well as lemon juice. At the very end, I also added some nuts.

    This was delicious - even more flavorful than it is colorful! I will definitely make this again and try different veggie combos.
