Ingredients

  • 1 1/2 pounds sweet potatoes (peeled, halved lengthwise and sliced into half moons)
  • 1 red onion (small, peeled, sliced into wedges)
  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon chopped fresh chives
  • 3 tablespoons vegetable oil
  • 14 ounces chickpeas (rinsed and drained)
  • 2 cups baby arugula
  • 1/2 cup chopped walnuts (toasted)

Directions

  1. Preheat oven to 350°F. Line a baking sheet with foil.
  2. Toss sweet potatoes and onion wedges with olive oil and 1 tbsp maple syrup. Season. Roast for 30 mins, until tender.
  3. Whisk together balsamic vinegar, chives, vegetable oil and remaining maple syrup. Add sweet potatoes, onions, chickpeas, arugula and walnuts and toss to combine. Serve.
