Ingredients

  • 5 sweet potatoes (or Yams, peeled and cubed into bite sized pieces)
  • 1 pound butternut squash (peeled and cubed into bite sized pieces)
  • 4 tablespoons olive oil (enough to coat the yams and squash for roasting)
  • 1/2 cup flat leaf parsley
  • 1/2 cup green onions (Chopped)
  • 1/4 cup dried cranberries
  • 1/4 slivered almonds (or Slices, use raw or lightly toast for added flavor)
  • cracked black pepper
  • kosher salt
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey (Raw is Best)
  • 1 pinch salt
