Simple, easy, and quick to make, this recipe for Roasted Salmon with Cilantro Butter is ready to eat in just 25 minutes. Flavored with fresh lime, cilantro, salt, and pepper, this homemade cilantro butter makes the perfect topping to freshly roasted salmon. Make the cilantro butter with a food processor for convenience. This recipe provides instructions for cooking the salmon on the stove, but you can alternatively roast the salmon in the oven if you so desire.

Ingredients

  • 200 grams unsalted butter (softened)
  • 1 1/2 cups cilantro leaves
  • 1 lime
  • salt
  • pepper
  • salmon fillets (skin-on)

Directions

  1. In a food processor, mix the butter and cilantro leaves until soft and fluffy.
  2. Add the lime juice, salt, and pepper to taste and mix again.
  3. Pour onto a flat surface lined with plastic wrap. Cover the butter with the plastic wrap and shape into a cylinder.
  4. Refrigerate.
  5. In a saucepan, add the fish skin side down. Season with salt and pepper.
  6. After 3 minutes, turn over and cook on the other side for another 3 minutes.
  7. Plate and add a slice of cilantro butter.
  8. Serve.
