    A definite “no brainer” ! Use a thermometer and it’s totally stress free.

    not much fat to spoon over potatos and parsnips so i added a bit of olive oil. i poked some of the paste into slits. recommend pulling the pork out closer to 140 degrees so meat doesn't dry out.
