Description

Red onions are more often than not used raw, typically sliced and added to salads and sandwiches and the like. Here, however, the onions are cut into quarters and roasted in the oven along with breadcrumbs and a drizzle of olive oil. Similar to other types of onions, they turn wonderfully sweet and the natural sugars are caramelized during cooking, and they make a delicious side dish for roast chicken or pork.

I roasted up these red onions yesterday and have to say that they absolutely amazing. The onions were so savory and well-seasoned; all the while did not turn to mush and held a little bit of crunch. I will prep this 4 star roasted red onion recipe many times; possibly even with yellow onions instead of red.
