I made this the day after Thanksgiving to give us a break from heavy starches, breads and dough of yesterday. We had lots of fresh poblanos in the garden so that made for easy inspiration. And I found fresh corn on the cob at the grocery store! (We live in Texas.) We also don’t eat a lot of potatoes or celery, both of which we had leftover from yesterday, so again, good inspiration for a chowder. And yesterday’s turkey carcass made a nice stock. I split the amount of cream and used 2% milk for part of it to lighten it up just a bit. I also used the immersion blender for a few rounds to thicken this up but I also think it helped blend the flavors more quickly. I highly recommend taking the few seconds to do that one step.
