- 1/2 tsp. pepper
- 2 Tbsp. extra-virgin olive oil
- 3 sweet potatoes (large)
- grated Parmesan cheese (optional, for serving)
- chopped fresh parsley (optional)

Directions
- Preheat the oven to 400°F.
- Lightly spray a baking sheet with nonstick cooking spray. Set aside.
- Combine the grated Parmesan, Italian seasoning, garlic powder, salt, pepper, and olive oil in a large mixing bowl.
