I’ve roasted Cauliflower several times using olive oil, garlic & Parmesan cheese. Today I did a twist by adding a sliced shallot, roasted the dish, then sprinkled with shredded Mexican four cheese mix to melt over the Cauliflower. My wife, who loves Parmesan, said she enjoyed this more!
