- 1 pound small new potatoes (scrubbed, quartered)
- 1 yellow onion (large, peeled, thinly sliced)
- 3 tablespoons olive oil
- ground black pepper
- kosher salt
- white truffle oil (Several shakes of, about 1/2 teaspoon)

I used a gourmet blend that I got from Costco of gold and red potatoes, but otherwise followed the recipe. I made them twice. The first time I used a Pyrex baking dish and there was more than one layer of potatoes- so those came out delicious but more like steamed potatoes. The next time I made it, I only used one layer and baked on a sheet pan - they came out as described in the recipe. Enjoyed both tremendously and my guest couldn’t stop eating them.

Not my favorite😬 I followed recipe EXACTLY and potatoes stuck to my pan and lots of the onions were burnt. It was difficult to scrape the potatoes out of the pan without them falling apart. It did not look appetizing by the time it was out of the pan, but the flavor was good, except for burnt onions. Definitely not for company if you care what your food looks like. I would advise lining your roasting pan, including sides, with foil and then spraying the foil with cooking spray. This will help with clean up and sticking.

Exactly as photographed. Big hit with my family & guests. It was very simple and yet tasted extremely elegant. I will be keeping this in our "favorites" recipe box to make many more times.
