Made this for my daughter. She hardly ever eats veggies. She’ll eat sweet potatoes, but only at restaurants. This is finally a recipe that tastes just like what we get in a restaurant, and she loved it!

This was a perfect healthy dish that compliments roasted chicken or turkey. I made it for a side dish at Thanksgiving. Everyone loved it and we had leftovers. For the leftovers I have been tossing a spoonful into my lunch salads. Yumm!

It’s just like she says! Crunchy, sweet and flavorful on the outside and soft on the inside. Aromatic and yummy. I had extra marinade leftover so I put in a handful of raw pecans and put them with the liquid into a small Cornell casserole dish and roast them in the oven at 425 for about eight minutes. The Liquid made the pecans sweet and crunchy and delicious! I put them on top of the potatoes for a great contrast of textures. I will make this again in a heartbeat!
