Directions
- Preheat the oven to 400°F. Line a large baking sheet with parchment paper.
- Lay the halibut skin-side down on the baking sheet. Rub the top of the fillet with the olive oil and season with salt and black pepper.
- Roast the halibut on middle rack of oven until it is just opaque and flakes easily with a fork, 10-14 minutes, depending on the thickness of the fillet. While the halibut roasts, prepare the beurre blanc.

Very easy and it turned out well. I used Mahi Mahi and served it with pilaf and kale. I’d say it was a $$$-$$$$ restaurant quality meal.
