  • 12 whole garlic (bulbs)
  • 2 tablespoons olive oil (for roasting garlic)
  • 1 tablespoon olive oil (for garlic puree)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

    Directions

    1. Preheat the oven to 400°F.
    2. Remove the papery skins from the outside of the garlic bulbs. With a sharp knife, slice pointed tops from the bulbs, creating a flat edge that exposes the cloves.
    3. Cut 12 square sheets of aluminum foil. Place one bulb of garlic cut-side up in the center of each sheet.
