Added some roasted red pepper and Serrano peppers for heat. Also added cheese on a few pieces. Great flavor and even better leftover!
So delicious! I’ll definitely be making it again.

Loved this, so easy to make! I used fresh cherry tomatoes instead of canned tomatoes and just mashed them into a thick sauce. Was so delicious!

Very easy recipe. I should have sliced a little thicker and greased the foil. Eggplant stuck to the foil. But it had a good flavor I will make again
