  • 10 chicken thighs (with bone in (buy skinless chicken, or remove the skin yourself))
  • salt (to season chicken, I used Vege-Sal)
  • pepper (to season chicken)
  • 3 teaspoons olive oil (more or less, depending on your pan)
  • 1 red onion (cut into slivers (next time I would use more onion))
  • 12 ounces sliced mushrooms ((buy sliced mushrooms if you want to save time))
  • 1 teaspoon dried rosemary (ground in a mortar and pestle or 10 fresh rosemary springs)
  • fresh parsley (chopped, for garnish, optional)

    Very good. I used boneless chicken, it was juicy, and the red onions were great. The only thing I would do is add more mushrooms since my family loves them.

    I had all ingredients on hand except for parsley, but my eaters didn't miss it - compliments all around! Happy to have discovered this as my partner and I am stockpiling recipes that are Whole30 approved but delicious enough to compete with any cream, sugar, or grain containing recipe.

    Easy to make and very tasty! For 10 thighs I might double the amount of mushrooms next time. Yummy

    delicious! searing the chicken really locked in the flavor. I added a touch of balsamic vinegar too for taste

    Delicious. The tip about browning the chicken and veggies first made all the difference. It was crispy and flavorful. I actually used a seasoning mix because I'm lazy but stuck to the script otherwise.

    Surprisingly it came out very good. I’m not a big fan of chicken and mushrooms mixed together... but it came out tender, juicy and flavorful. I used chicken thighs, before I put it in the oven I added 1/2 cup white wine. Would definitely recommend this recipe.

    I made this tonight and was somewhat disappointed. It looked so delicious, but as another reviewer stated, it was very bland. The onions added no favor at all. I even put a balsamic glaze over chicken which did nothing. So sorry but will not make this again.

    My daughter made this dish and it was delicious!
    I added more mushrooms, and onions off the bat. I also used pink Himalayan salt and fresh ground pepper. It was very tasty.

    Turned out decent. i added a lot more seasoning to the chicken and the mushrooms though and it still seemed a little bland. Definitely season well before cooking it!

    This is a great dish. I added some basil and cayenne pepper to the chicken before browning it. I also diced some garlic and shallots to cook with the onions and mushrooms. It is actually better the next day than it was right out of the oven. Solid dish and really easy to make.
