Having a hard time deciding between chicken or ham for dinner? Why not try these Roasted Chicken Breasts with Honey and Mustard Wrapped in Ham? This dish offers the nutritious chicken breast as the base, topped with honey, mustard, basil and thyme. Then wrap all that aromatic and hearty flavors in smoked ham sliced and bake to perfection. Serve with your favorite side, or on its own. Either way, this meal is a crowd-pleaser.

Ingredients

  • 4 chicken breasts boneless (and skinless)
  • salt
  • ground black pepper
  • olive oil (to taste)
  • 2 tablespoons honey
  • 2 tablespoons mustard
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • smoked ham (sliced)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Season the chicken breasts with a pinch of salt and pepper, and place them in an oven-proof dish.
  3. Drizzle with olive oil.
  4. In a bowl, combine the honey, mustard, basil, and thyme.
  5. Brush the chicken breasts with this mixture, and wrap in pieces of smoked ham.
  6. Bake for 30 minutes.
  7. Remove from oven, and turn the chicken breasts over. Brush them again with the honey and mustard marinade.
  8. Bake for 15 more minutes.
  9. Remove from the oven, and let rest for a few minutes before serving.
  10. Serve with potato chips, and a salad.

I find boneless, skinless chicken breasts to be pretty bland. So I was glad to find this recipe because it uses a lot of great flavors to liven up the chicken. The result is quite good. The chicken stays moist because of the marinade and the ham adds another layer of flavor to the dish. I did not have any basil, so I used double the amount of thyme and thought the seasoning was just great.
