Simple and delicious! Like it most when I make it using vegetable broth instead of water. It gives it a depth of flavor that the water cannot provide.

It's pretty good! I roasted garlic with the cauliflower. I assume it would be even better actually pureed, but as I am a poor college student, I have no tools to do that. Mashed with a spatula works fine.

Wonderful recipe and easily converts to a mashed cauliflower substitute for mashed potatoes. Just add a little less liquid and some onion and it’s amazing. I used cream chicken soup as the base. Yum!

Cooking the cauliflower for hour and a half in the oven is a bit much for me, but the result is really good. No need to add salt if you use stock.

I went half chicken stock and water. I also added a piece of garlic a teaspoon of sugar and a little saffron. And cheese on top.

Very good! I used frozen cauliflower and roasted it for 1/2 hour instead. Still turned out delicious and smooth !

This soup did not turn out well at all the onion was overpowering. I added more seasonings to add a more complex flavor. I will not make this recipe again and I am glad it didn’t make very much.

This is pretty plain. I'm sure you all knew that from the list of ingredients though. I did one of the cups in almond milk to make it more thick, and added paprika, celery salt, and garlic salt. It's good but I don't see myself making it again. It would definitely be better with some carrots.

Great flavor but the texture was grainier than expected. Perhaps this down to me using a regular blender rather than a vitamix

Creamy. Nice roasted flavor. Super easy, especially with immersion blender. I ended up adding garlic and other seasonings, Consider serving with cheese or croutons if on your diet, as it is a little bland alone. Have fun with it.

Big fan. Super simple! I roasted my pre cut cauliflower in the over with black pepper and garlic (figured it was easier then to roast the whole head). Then to boil I used 2 cups veggie stock and 2 cups water. Very minimal ingredients but tasted great. Used as a side to a BLT :)

Pretty good- I added three cloves of garlic = very good. Plus roasted 5 Clovis of garlic in the oven. Excellent when dropped into the soup.

Loved it! I added a bit more water a bit of garlic and nutritional yeast to make it a little bit more flavour.
