These roasted beets will please add color and flavor to your dinner table and will be the delight of any vegetarian to dine with you. Peeled and quartered beets are drizzled with balsamic vinegar, olive oil, salt and pepper before being roasted to tender perfection. When the beets are finished roasting, top with a mixture of your favorite herbs such as basil, oregano, or thyme. A hearty vegetarian side dish.

Ingredients

  • 6 beets (peeled and quartered)
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons virgin olive oil
  • sea salt
  • ground black pepper
  • 1 sprig fresh dill
  • 1 sprig fresh mint

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Line a baking sheet with parchment paper.
  3. Put the beets on the baking sheet. Sprinkle with vinegar and oil and salt and pepper to taste.
  4. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake another 20 minutes or until soft. If the liquid evaporated out, add a little more during baking.
  5. Serve with the herbs sprinkled on top.
