Roast Pork Tenderloin with Waldorf Salad

  • 1 tablespoon oil
  • 8 3/4 ounces pork tenderloin
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 apple (small, peeled, quartered and cubed)
  • 2 stalks celery (sliced)
  • 6 walnuts (toasted and chopped)
  • lemon juice (to taste)
  • chili flakes (to taste)
  • 3 1/2 ounces baby greens (mixed)

Directions

  1. Heat oil in a large frying pan and brown pork on all sides over high heat. Season and cook over medium-low heat for 12-15 mins, turning. Wrap in foil and let rest for 4-5 mins.
  2. Mix mayonnaise and sour cream. Add apple, celery and walnuts. Add lemon juice and chili flakes, to taste. Toss with lettuce greens and transfer to a serving plate. Slice pork thinly and serve on salad.
