Description

This pork shoulder takes a little time and planning ahead, but is easy to make and allows for chores or leisure in between. Marinated in an orange and bay leaf marinade for two hours and slow cooked to perfection, this pork shoulder has a unique flavor that is sure to please.

Ingredients

  • 1 pork shoulder
  • 2 bay leaves
  • 2 orange (juice)
  • olive oil
  • 2 onions (chopped)
  • 6 parsley sprigs (chopped)
  • 6 garlic cloves (sliced)
  • 1 teaspoon paprika
  • salt
  • 1 beer (black)

Directions

  1. Make deep cuts in one side of the pork shoulder.
  2. Mix all the ingredients for the marinade, except the beer, in a bowl. Mix well.
  3. Add the pork shoulder, and rub marinade into flesh. Cover the bowl, and marinate for 2 hours.
  4. Heat a high sided skillet with a little olive oil.
  5. When the oil is hot, brown the meat, without the marinade, on both sides for a few minutes.
  6. Add marinade, and sprinkle with the beer. Bring to boil, lower heat, and simmer for 1/2 hour, turning the meat occasionally. Remove meat from pan.
  7. Cut the meat into chunks and remove the bone, put back in the pan, bring to boil again, and simmer for another 10 to 15 minutes.
