  • 1/3 cup olive oil
  • 4 pounds standing rib roast (at room temperature)
  • 4 red onions (large, unpeeled, quartered)
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar

Directions

  1. Preheat oven to 425°F. Rub 2 tbsp oil into beef. Season. Place on a rack in a roasting pan. Roast for 20 mins.
  2. Toss onions with remaining oil, sugar and balsamic vinegar. Arrange around beef in pan. Reduce heat to 350°F. Roast for around 40-50 mins, for rare (140-150°F) to 55-60 mins for medium-rare (160°F). Let rest, covered loosely with foil, for 15-20 mins. Carve.
