Ingredients

  • 2 cups yukon gold potatoes (peeled, cut into 1/4-inch dice)
  • 3 tablespoons sea salt
  • 1/4 cup olive oil
  • 1 spanish onion (medium, diced)
  • 1/2 green bell pepper (small, cut into small dice)
  • 1/2 red bell pepper (small, cut into small dice)
  • 2 cups roast beef (cooked, cut into 1/2-inch dice)
  • 2 cloves garlic (minced)
  • 1 sprig thyme leaves (picked)
  • 3 tablespoons flat leaf parsley (chopped)
  • 1 tablespoon worcestershire sauce
  • salt
  • freshly ground pepper
  • 1 pinch cayenne pepper (or paprika)
  • beef broth (if desired)
  • 6 large eggs (fried)
  • 6 slices sourdough bread (toasted)
  • 1 spanish onion (large, sliced very thinly on a mandoline)
  • 2 cups whole milk
  • 2 tablespoons cajun seasoning
  • 2 cups all-purpose flour
  • 1 quart canola oil
