Make a flawless and creamy risotto at home with fresh summer ingredients. This recipe is a simplified vegetarian version of the northern Italian classic, yet your taste buds will surely thank you for taking the 40 minutes it will take to complete this dish. This recipe is best made with medium or short grain white rice, as this will allow each grain to absorb a larger amount of the broth, which will make every bite more flavorful.

Ingredients

  • 180 grams fresh mushrooms
  • vegetable broth (to taste)
  • 2 cloves minced garlic
  • 1 onion (chopped)
  • 50 grams butter
  • 250 grams risotto (: 250 grams)
  • cherry tomatoes (to taste)
  • 1 sprig spinach (to taste)
  • salt
  • pepper
  • 2 tablespoons white wine (: to taste)

Directions

  1. Laminate fresh mushrooms.
  2. Make a stew with butter, onion and garlic.
  3. First add the rice and golden, then white wine and mushrooms.
  4. When the wine evaporates, cover again the rice with vegetable broth, previously boiled.
  5. As the broth evaporates add a new amount of broth to cover and repeat 1 more time.
  6. When it is cooked, but still with broth, connect with butter, cherry tomatoes and spinach leaves.
  7. Add the grated parmesan and season to taste.
  8. If needed add more broth or water.
  9. The risotto should be falling off the spoon. Sprinkle with more cheese and serve immediately.
