Perfectly balancing a medley of sweet and tart flavors, these cookies bring together the rich and unique flavors of ricotta, vanilla bean, and lemon.

Ingredients

125 grams ricotta cheese (cow milk)
1 eggs
300 grams flour
125 grams granulated sugar
grated lemon peel
1 teaspoon lemon extract
1 vanilla bean seeds (scraped)
8 grams baking powder
salt

Directions

1Preheat the oven to 180C.
2Beat the ricotta cheese with the sugar, a pinch of salt, the lemon extract, the grated peel of 1 lemon, and the vanilla seeds.
3Add the egg.
4Incorporate the flour; the mixture should be smooth and uniform in consistency.
5Cut the dough into pieces and shape into long links, then braid the links or shape them into rings.
6Coat the cookies with granulated sugar and place them on a wax paper lined cookie sheet.
7Bake the cookies for approximately 20 minutes.
8Remove the cookies from the oven and cool on a wire rack.
