A near-endless array of sweet ricotta pudding recipes exist, and it's no wonder they're so popular: they're easy to prepare and the results are comforting and impressive at once. This take employs gelatin to ensure it firms up, along with chocolate chips that are folded in for flavor and texture. The puddings will need at least two hours to set in the refrigerator, so plan for the additional prep time.

Ingredients

  • 1 gelatin (sheet)
  • water
  • 500 grams ricotta cheese
  • 120 grams sugar
  • 150 milliliters milk
  • 100 grams chocolate chips (or candied fruit)

Directions

  1. Soak the gelatin in cold water for 5 minutes. Drain well.
  2. In a bowl, beat the ricotta with the sugar.
  3. In a pan, heat the milk and dissolve the gelatin.
  4. Add the milk to the ricotta, and then add the chocolate chips.
  5. Pour into molds.
  6. Allow to rest in refrigerator for 2 to 3 hours.

This recipe was quick and delicious. I garnished it with a dollop of whipped cream and a few curls shaved from a chocolate bar!
