Ingredients

200 grams ricotta cheese
190 milliliters milk
4 eggs
150 grams flour
1 teaspoon baking powder
1/2 teaspoon salt

Directions

1In a medium bowl combine ricotta, milk and egg yolks until creamy.
2In another bowl beat the egg whites until stiff.
3Add flour, baking powder and salt to the ricotta mixture, and mix throughly.
4Gently incorporate the egg whites into the mixture.
5Heat up a frying pan, lightly butter the bottom and when it is hot pour a ladleful of batter.
6Cook for 2-3 minutes, then flip the pancakes to cook the other side.
7Serve very hot with honey, maple syrup, and fruit.
