Ingredients

  • 2 1/2 pounds baking potatoes (cut into 1 inch cubes)
  • 3 cloves garlic (peeled)
  • 1 cup part-skim ricotta cheese
  • 3 tablespoons butter
  • 3/4 cup milk (warm)
  • fresh chives (to garnish)

Directions

  1. In a large saucepan, combine potatoes and garlic. Cover with water and season with 2 tsp salt. Bring to a boil then reduce heat and simmer until cooked through, about 10 mins. Drain. Return potatoes to pan and place over medium heat to dry out.
  2. Mash potatoes and garlic with ricotta, butter and milk. Season. Garnish with fresh chives.
